MADISON, Wis. – A bill to name Colby as the official state cheese of Wisconsin was introduced in the Legislature. No surprise, both sponsors have Colby, population 1,500, in their Wausau-area districts. Senator Kathy Bernier, R-Lake Hallie, and Representative Donna Rozar, R-Marshfield, noted that a farm lad, Joseph Steinwand. came up with Colby processing formula on the floor of his father’s small wooden cheese factory in 1885. The cheese, from cow’s milk, became popular for its semi-hard consistency and nutty undertones.
