WINONA, Minn. – The upstairs banquet room at Jefferson Pub & Grill will be converted to short-term Airbnb-style rental apartments. Co-owner Chase Hoffman said construction would begin by June. The restaurant and bar will remain open during renovations, he said. Hoffman plans nightly rates from $75 to $125. A shortage of downtown hotel space makes a good market opportunity, Hoffman said. Also, he said, the restaurant will benefit from the lower overhead with a smaller footprint.
