WESTBY, Wis. – The Westby Creamery co-op  is planning $1 million in new facilities  to filter excess whey from cottage cheese production. The creamery had been spending $50,000 a month to dispose of whey.  Now the whey will  be converted  into animal feed. Pete Kondrup, general manager, said the whey project will  help keep the 140-member 119-year-old co-op in business. It wasn’t sustainable to keep the plant running and spending $50,000 a month hauling the whey out, he said. The whey project will pay for itself in  in five to six years.
